Veggie spring roll

Nothing says summer like fresh veggie spring rolls! A picture of delectable spring rolls was floating around Pinterest and I just had to try this recipe. It was so easy and it just doesn’t get much healthier! Boyfriend approved, I will definitely be making this for an appetizer next time we have guests over!

Ingredients

  • Avocado
  • Rice paper
  • Bean thread noodles
  • Carrots
  • Cucumbers
  • Fresh basil leaves
  • Fresh mint leaves

Dipping sauce ingredients

  • Juice from 1/2 lime
  • 2 Tablespoons canola oil
  • 1 Tablespoon rice vinegar
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon brown sugar

Directions

Soak bean noodles as directed. Wrap noodles, veggies, basil and mint in rice paper wrap. Mix dipping sauce ingredients. Serve immediately.
