Chicago recently suffered the worst snowstorm since 1967, blanketing the city with 20 inches of snow. Thousands of cars were stranded on Lake Shore Drive, waves were registered at 14-20 feet on Lake Michigan, and lightning and thunder filled the skies, a truly amazing spectacle. Now forecasters are predicting bitter cold temperatures for this weekend. So what did we do? Naturally, we had to go out and check it out! Here are some pics of downtown and of my puppies at the dog park the day after:
Our stay at the park was rather short due to the cold wind but as you can see, we were having a blast! I figured, what could be better than some warm beef stew on a day like this? So whipped out my trusty crock pot I have raved about (here) (here) and (here).
- 2lbs beef cut into bite sized cubes
- ¼ cup of whole wheat flour
- Potatoes peeled and diced (3-4)
- Carrots peeled and diced (6-7)
- Celery diced (about 1 stalk)
- Onions chopped (1-2)
- 1 ½ cups of low sodium beef broth
- 1 teaspoon of Worcestershire
- Garlic (about 1 clove)
- 1 teaspoon of paprika
- 1 ½ teaspoons of sea salt
- ½ teaspoon of course ground pepper
- 1 bay leaf
- Place beef in a large plastic bag. Combine ¼ cup flour with ½ teaspoon salt; pour into the bag with the meat, and shake to coat.
- Heat olive oil in a large skillet over medium-high heat. Add beef, and cook until evenly browned on the outside. Transfer to a slow cooker along with remaining ingredients.
- Cover, and cook on low for 9-10 hours or on high for 4-6 hours.
- Stir stew before serving, and enjoy!
