Flirty summer salads

Well it’s the first warm day since our freakish early spring weather in March, and I must say, it feels faaaaabuloussss! It’s amazing how the weather can affect your mood so drastically! So in celebration of the nice weather I whipped up a few fun summer salads that I saw on Pinterest and re-created. I will be making both of these again very soon!

Flirty caprese salad (Recipe from Savory Sweet Life)

Ingredients

  • Fresh basil leaves
  • Cherry tomatoes
  • Mozzarella balls
  • Olive oil
  • Balsamic vinegar
  • S&P

Directions

Cut cherry tomatoes and mozzarella balls in half and place in serving bowl. Chop basil leaves into strips or small pieces. Drizzle 3 parts oil 1 part balsamic vinegar and a few shakes of S&P. Stir to mix and serve.

Flirty garbage salad (Recipe by Authentic Suburban Gourmet)

Ingredients

  • 1 Avocado
  • 1 cup cherry tomatoes
  • 1/2 Cucumber
  • 1/2 small red onion
  • 1/2 cup of frozen corn, heated
  • Optional 1/3 cup of feta cheese (I left this out and it was absolutely fine without it)

Dressing ingredients

  • 1/3 bunch of chopped cilantro
  • 3 Tablespoons of olive oil
  • 1 Tablespoon sherry vinegar
  • 1/2 teaspoon of garlic powder
  • Dash of S&P

Directions

Chop veggies and toss in a serving bowl. Combine dressing ingredients and whisk in a small bowl. Once thoroughly combined, pour over veggies and mix.

(My avocados sat out and browned a bit hence the ugly look – don’t judge a salad by it’s browned avocados…)
